Smoky, Roasted Veggies

  1. Preheat oven to 425º.
  2. Toss vegetables in olive oil and Jay D’s Spicy & Sweet BBQ Rub.
  3. Between three sheet pans or working in batches, pour the vegetables on sheet pan, leaving room for even roasting (and prevent steaming).
  4. Roast for 30 minutes or until vegetables are tender.
